Bacon and Zucchini Egg Muffins

- 4 eggs
- 0.5 zucchini
- poivre et sel

Preparation time: 15 min + 15 min baking time
- Preheat the oven to 190 °C. Cut 8 squares of baking paper of about 13 cm per side and press them into the wells of a muffin tin (using a glass makes it easier).
- Slice the zucchini into long, thin slices (4 mm) using a mandoline. Place them in a circle inside the muffin molds, against the sides. Add 1 slice of bacon, then 1 egg white (keep the yolks aside). Season lightly and bake for 15 min.
- Remove the muffins from the molds. Take off the papers and place 1 egg yolk on each muffin. Serve immediately, for breakfast or as a light meal, with bread.
Kulinarischer Rat :
You can replace the zucchini with other vegetables and the bacon with pancetta or chorizo.
