Mascarpone French Toast with Red Berries

- 3 eggs
- 400 g de mélange de fruits rouges
- 4 sprig(s) de menthe
- 300 g de brioche
- 1.5 dl de lait entier
- 150 g de mascarpone
- 1 tbsp de miel
- 1 tbsp de sucre impalpable
- 50 g de beurre

Preparation time: 10 min.
- Mix the mascarpone and the honey.
- Beat the eggs and the milk in a shallow dish. Cut the brioche into 8 thick slices, then trim off the crusts.
- Melt a little butter in a frying pan, dip the brioche slices into the egg-and-milk mixture and place them one by one into the hot butter. Brown them on both sides over medium heat (you will need to do this in batches, adding more butter before each batch).
- Serve with a spoonful of mascarpone and red berries. Dust with icing sugar and garnish with mint.
